Pudina Mathri Recipe - क्रिस्पी और खस्ता पुदीना मठरी  - Priya R - Magic of Indian Rasoi

Pudina Mathri is a delicious deep fried savoury snack made with flavouring of mint leaves & cumin. It is deep fried to crispy and golden pink colour. You can make this mathri all year round but this is specially made during Holi or Diwali festival. Made from all purpose flour, ghee/oil, and spices these tastes best with a cup of tea or can be had as a snack along with pickle. They are fried slowly in hot oil to give it a crispy and melt in mouth texture. Do try it today.

INGREDIENTS:

1-½ cup maida/all purpose flour
2 tbsp dry mint powder or ⅓ cup chopped fresh mint leaves
¼ cup melted ghee/clarified butter
½ tsp jeera/cumin seeds
¼ tsp black pepper powder
¼ tsp ajwain/carom seeds
½ tsp salt or to taste
⅓-½ cup water approx 
oil for frying


SERVES: Makes approx 275g pudina mathri
PREPARATION TIME: 10 min
RESTING TIME: 20 min
COOKING TIME: 20 min
TOTAL TIME: 40 min
* 1 CUP = 240 ML


METHOD:

1. In a big bow mix maida, pudina powder, ghee, salt, jeera, ajwain & black pepper powder. 
2. Use Water to knead in to medium stiff dough. Cover and keep aside for 15-20 min.
3. After 20 min knead the dough for 1-2 min and divide into 4 equal size balls.
4. Using a rolling pin roll the balls in to a Paratha like Roti with thickness approx 1/8".
5. Using a cookie stencil cut Mathri in desired shape. Alternatively make smaller balls from the dough and roll it to Small Puri Shape rounds.
6. Deep fry in hot oil in about 2 batches. When putting the Mathri in Hot Oil keep the flame on medium and then reduce to low flame. Fry Mathri on low flame for 10-12 min till golden. Do not use medium or high flame as Mathri will remain uncooked from inside. It should be cooked slowly to cook from inside.
7. Take out Mathris on paper napkin and cool completely. Repeat step for frying rest of Mathris.
8. Once completely cooled store Mathris in Air Tight Container. It can be stored for 15 days. Ensure that the container is free from moisture to retain the crispiness of the Mathris. 
9. Serve Mathris during Festival time or have it with tea as snack! ENJOY!

  1. The recipe requires a lot of ingredients I do not have in the fridge, but I think that this problem is solvable. Many thanks for sharing the piece!

  2. Мне кажется, что этот рецепт нужно готовить с аутентичными специями. Вам было бы неплохо дать объяснение специям, что можно заменить.
