Strawberry crush is a syrup made from fresh strawberries and sugar and mixed with water or milk to make crushes, smoothies, milk shakes etc. Starwberry crush is available in the markets however they are generally made with very less strawberries or no strawberries at all! They use artificial flavours and colours. With this recipe you can make this crush at home using simple ingredients. It has a refrigerated shelf life of 2-3 months and can be used mixed with milk or water or topping over ice cream. This home made crush tastes very fresh and delicious. Do try it at home and you will not buy those available in market.

INGREDIENTS:

For Strawberry Crush:

180-200g strawberries
1 cup sugar
¾ cup water
1 tsp lemon juice or ⅛ tsp citric acid
¼ tsp strawberry emulsion (optional)

For Strawberry Milk:

1-2 tbsp strawberry crush
200 ml chilled milk


SERVES: Makes 300ml strawberry crush
PREPARATION TIME: 5 min
COOKING TIME: 10 min
TOTAL TIME: 15 min
* 1 CUP = 240 ML

METHOD:

For Strawberry Crush:

  1. Wash strawberries well with water & pat dry it. Remove stems & chop it roughly. 
  2. Grind strawberries to a smooth puree in a mixer grinding jar. Do not use any water. Keep aside. 
  3. In a pan add sugar & water. Keep the flame high and allow it to come to boil. Make sure sugar dissolves completely.
  4. Add lemon juice & mix. 
  5. Lower the flame and cook for 8-10 mins. Stirring intermittently. 
  6. After 8 min, check syrup consistency. It should be thick. To check put a drop of syrup on a plate and tilt it vertically, it should not come flowing down. If it doesn’t syrup is ready!
  7. Add strawberry puree to the syrup & let it come to boil on high flame. 
  8. Cook for 2 min on lower flame. Then switch off the flame. 
  9. Add ¼ tsp strawberry emulsion (optional) & mix well. 
  10. Transfer strawberry crush to a bowl and allow it to cool down completely.
  11. After its cooled down, transfer strawberry crush to a sterilised bottle & store in fridge for 3 months or in freezer for 4-5 months.

For Strawberry Milk:

  1. In a glass add strawberry crush. 
  2. Add chilled milk & mix well. 
  3. Strawberry Milk is ready to serve!
