Healthy Gujarati Handvo Recipe - पौष्टिक गुजराती हांडवो रेसिपी - Priya R - Magic of Indian Rasoi

Handvo is a Gujarati savoury cake usually made from mix of 2 or 3 flour. Bottle gourd and other vegetables are added to it to make it full of fibre and nutritious. It is very nice and chewy due to lots of veggies added to it. You can skip any veggies you do not prefer but it is suggested to include all to give your family a nutritious meal. You can bake handvo in oven or even use covered pan to make it over stove. Do try it today.

INGREDIENTS:

2 tbsp oil
⅛ tsp turmeric powder
2 tbsp curd
1 cup water (approx)
¼ cup coarsely ground wheat flour
1 tbsp jaggery (optional)
½ cup grated bottle gourd
¼ cup grated carrot
½ cup grated beetroot (raw)
½ tbsp green chillies & ginger paste
6-7 grated garlic cloves or 1 tsp garlic paste
1 - ½ tsp salt or to taste
2 tbsp boiled corn
¼ cup chopped coriander leaves
½ tsp eno or ¼ tsp baking soda

For tempering:

3 tbsp oil
½ tsp mustard seeds
¼ tsp asafoetida
1 tsp sesame seeds
1 tsp red chilli powder

SERVES: 4-5 persons
PREPARATION TIME: 20 min
COOKING TIME: 45 min
TOTAL TIME: 65 min
* 1 CUP = 237 ML

METHOD:

1. In a bowl, add handvo flour, oil, curd & turmeric powder.
2. Add 1 cup water or as needed gradually to make thick batter like dosa.
3. Cover with a plate/lid and let it ferment for 7-8 hours or overnight.
4. After 7-8 hours, check the consistency, if required add about 1/4 cup water.
5. Add wheat flour, jaggery, bottle gourd, carrot, beetroot, green chillies & ginger paste, grated garlic cloves, salt, boiled corn & coriander leaves
6. Add eno & mix well. 
7. Transfer handvo mixture in greased 7-8 inch cake mould.
8. For tempering, heat oil in a small pan.
9. Add mustard seeds and allow it to crackle.
10. Add asafoetida & sesame seeds. Turn off the flame.
11. After 2 min, add red chilli powder. 
12. Pour this tempering over the handvo mixture. 
13. Bake at 180C for 40-45 min in preheated oven until it turns light golden brown.
14. Once baked allow it to cool completely & then cut into desired pieces. 
15. Serve hot with green chutney and/ketchup.
