Rajasthani Moong Dal Halwa Recipe

Rajasthani Moong Dal Halwa is a traditional Indian Sweet / Dessert made from Yellow Green Split Gram or Lentils, Clarified Butter (Ghee), Khoya (Mawa) and Sugar and decorated with Nuts and Dry Fruits. It is usually made during winters as it keeps warm and it is also made on auspicious occasions like Weddings, and festivals such as Diwali and Holi. It takes a little patience with this recipe as the Moong Dal is slowly cooked in Ghee till Golden! However, the effort is worth the taste of the final product! You will need second serving with this dessert as it tastes very delicious. Moong Dal Halwa is made across India especially Rajasthan and North India. You can easily store this at room temperature for 2-3 days or if the the weather is hot it is advisable to store in refrigerator. Just reheat the halwa in microwave or Pan before serving.

INGREDIENTS:

125 gm Moong Dal (Split Yello Gram) (1/2 + 1/8 Cup)
125 gm Sugar (1/2 + 1/8 Cup)
200 gm Water (1 Cup)
1/4 Tsp Cardamom Powder (Elaichi)
10-12 strands Saffron (Kesar)
125 gm Clarified Butter (Ghee) (1/2 + 1/8 Cup melted)
1 Tbsp Bengal Gram Flour (Besan)
75 gm Grated Unsweetened Khoya / Mawa
1/3 - 1/2 Cup clippings of Almonds, Pistachios, Cashew nuts and Raisins
Clippings of Pistachios for garnish

SERVES: Makes 550 g Moong Dal Halwa
PREPARATION TIME: 15 Min
COOKING TIME: 35 Min
TOTAL TIME: 50 Min
* 1 CUP = 237 ML


METHOD:

1. Wash Moong Dal 2-3 times and then soak for 3 hours.  Grind to a coarse mixture. Keep aside.
2. In a Pan take Sugar and Water and cook on high flame stirring constantly. Once sugar dissolves cook for 1-2 min.
3. Add Cardamom Powder (Elaichi), and Saffron (Kesar).
4. Switch off flame and put the Sugar Syrup aside.
5. Take Clarified Butter in a Kadai or Non Stick Pan.
6. Once ghee heats up add Bengal Gram Flour (Besan) and cook for 1-2 min till Besan gives its aroma.
7. Add Ground Moong Dal and cook on medium flame stirring constantly till it turns dark golden in colour. It take 10-15 min to cook.
8. Add Grated Unsweetened Khoya / Mawa and cook for 3-4 min.
9. Add Sugar Syrup in the same and mix well.
10. Once it starts to boil, reduce flame to low, cover with lid and cook for 5-10 min.
11. After 5-10 min check the Moong Dal and cook on medium-high flame till water dries up.
12. Add clippings of Almonds, Pistachios, Cashew nuts and Raisins. Mix well and cook till Moong Dal Halwa leaves the sides of the Pan
13. Once Moong Dal Halwa leaves the sides of the Pan it is ready to eat!
14. Serve hot garnished with clippings of Pistachios!
