Surti Sev Khamani - Instant Khamani with Besan Recipe - सुरती सेव खमनी रेसिपी - Priya R - Magic of Indian Rasoi

Surti Sev Khamani is famous snack made from chickpea mixed with different spices & cooked to a crumbly texture. It is garnished with sev & served with chutney. It is popular across Gujarat as farsan, however, it has its origin in Surat. In this recipe you can make this wonderful dish instantly using chickpea flour instead of using soaked lentils. It quickens the process & at the same time it tastes as good as the khamani made from chickpea lentils. Do check out this recipe.

INGREDIENTS:

Khamani:

1 cup chickpea flour (besan)
1/3 cup milk
8-10 cloves of grated garlic
Juice of 1/2 lemon
1 tsp ginger-chillies paste (adjust as per taste if required)
1/4 tsp asafoetida
1/4 tsp Eno Fruit Salt
1/8 tsp turmeric powder
3/4 cup water
Sugar syrup - 2 tbsp sugar mixed in 1/4 cup water
Salt to taste
Oil for greasing

Tempering:

4 tbsp oil
2 tbsp finely chopped coriander leaves
1/4 tsp cumin seeds
1/4 tsp asafoetida
1/8 tsp mustard seeds

SERVES: 375g Surti Khamani
PREPARATION TIME: 10 Min
COOKING TIME: 15 Min
TOTAL TIME: 25 Min
* 1 CUP = 237 ML

METHOD:

For Steaming Khamani: 

1. In a bowl, add chickpea flour (besan), cloves of grated garlic, asafoetida, salt to taste, turmeric powder, ginger-chillies paste & lemon juice.
2. Add water little by little & prepare a smooth batter similar to pakora - I have used 3/4 cup water. 
3. Lastly add Eno Fruit Salt & mix well.
4. Immediately transfer it to greased dhokla plate.
5. Lightly tap to level it. 
6. Put plate in a hot water steamer & cover & steam on high for 8-10 min.
7. Till then take sugar in a bowl and add 1/4 cup water & mix - keep aside.
8. After 10 min of steaming take out the plate.
9. Using a knife make few cut marks on it.
10. Pour milk (at room temperature) over it & allow it to soak in khamani for 10-15 min.
11. After 15 min mix the khamani mixture using a spatula.
12. Using hands make crumbly mixture - you can also use a mixer grinder.

For Tempering:

1. Heat oil in a kadai. 
2. Add mustard seeds & allow it to crackle.
3. Now add cumin seeds and asafoetida.
4. Add prepared khamani mixture & mix - keep flame low.
5. Add prepared sugar syrup & mix.
6. Cover & let it cook for 2-3 min.
7. After 2-3 min switch off the flame.
8. Lastly add finely chopped coriander leaves & mix - it is ready to serve!
9. Serve Surti Sev Khamani garnished with nylon sev!
