How to Make Perfect Frozen French Fries - Magic of Indian Rasoi -Priya R
French Fries are perfect snack food to go with Burgers, Pizzas or just to munch alone. This junk food is all time favourite and once in while when you want to go over the board on gluttony you just cannot have enough of this tasty potato fries. With this recipe you can make perfect french fries at home just like the McD's or the ready to fry packed variety available in the market. To make this fries you need new potatoes - the ones with thin red skin which are easily available during Winters in India. So this is the perfect time to make this recipe! What's better - these fries can be made in a lot and stored in deep freezer for 3-4 months just like the ready-to-eat packets available in the super store! Do try this recipe this winter!

Ingredients

1 Kg New Potatoes
2 Tbsp Salt
4-5 ltr Water
Oil for frying

Serves: Makes about 1 Kg of French Fries (4-5 servings)
Preparation time: 30 min
Cooking time: 10-15 min
* 1 Cup = 237 ml

Method:

1. Peel & wash potatoes thoroughly to get rid of all the dirt. Keep the potatoes immersed in water.
2. Either slice potatoes in fries shape with a knife or using a french fries cutter. Transfer immediately to a bowl of water to prevent chips from turning black and it also washes away any excess starch.
3. Boil water in a wide and deep vessel.
4. Add salt and put french fries. The water temperature will fall down as soon as french fries are added. Cover with a lid and let it come to boil again.
5. Once water starts to boil again, remove the lid and cook french fries for 3 mins. It will be cooked 70-80%.
6. Drain the fries from the hot water and transfer immediately to ice cold water to stop the cooking process.
7. Let the fries sit in cold for 20-30 mins.
8. After that drain the water completely and spread the fries on kitchen towel so that all the water gets absorbed. Leave it for 1-2 hours under fan or for 30 mins under sun.
9. Transfer the french fries to zip lock bag and spread them a bit to avoid fries from sticking to one another.
10. Freeze for at least 8-10 hours before frying.
11. Heat oil for deep frying and add french fries in batches directly from the zip lock bag. No need to thaw.
12. Cook the fries on medium to high flame until crispy and golden in color.
13. Remove on tissue paper.
14. Sprinkle salt and seasoning of your choice.
15. Homemade French Fries are ready to serve!
