Instant Sev Khamani in Microwave Recipe - Magic of Indian Rasoi - Priya R

Sev Khamani is a very a famous Gujarati snack or farsan from the South Gujarat region. It makes for the perfect breakfast along with Khaman, Dhokla & other delicacies. Sev Khamani is flavored with generous dose of garlic and it has sweet & tangy taste to it. Surti Khamani is a good source of protien as it contains besan or gram flour but it is prepared using generous amount of oil, so not the healthiest farsan.

INGREDIENTS:

1/2 Cup Besan/Gram Flour
1/4 Cup+1/8 Cup Water or as needed
pinch haldi/turmeric powder
pinch hing/asafoetida
1 Tsp Green Chillies & Garlic paste
3 Tbsp Powdered Sugar
1 Tsp Lemon Juice
1/4 Tsp Eno Fruit Salt
4 Tbsp Milk
3 Tbsp Oil
1/4 Tsp Rai/Mustard Seeds
1/2 Tbsp - 1 Tbsp Chopped Coriander leaves
Salt to taste
Sev & Pomegranate Seeds for garnish

Serving: 1-2 persons
Preparation & Cooking Time: 15 mins
*1 Cup = 237 ml

METHOD:

1. In a bowl mix besan and water. Make sure the batter is lump free. Use water as needed, consistency should be like dosa batter - medium thick. In total i have used 1/4 cup+1/8 cup water.
2. Add hing, turmeric, green chillies & garlic paste (you can alter the amount of garlic & green chillies as per your taste but traditionally it is loaded with garlic), powdered sugar, lemon juice & salt. Mix well.
3. Add eno fruit salt and mix it one direction till the mixture gets frothy.
4. Pour the khamani mixture in oil-greased microwave safe container.
5. Microwave at high power for 3 minutes.
6. Remove from the microwave and make random cuts into the dhokla.
7. Pour milk in this mixture and allow it come to room temperature. Milk helps in making the Khamani soft and smooth in texture.
8. Using your fingers, mash the mixture to crumbs like texture. Keep it aside.
9. In a pan, heat oil.
10. Add rai/mustard seeds, allow it to crackle.
11. Now add khamani mixture to the pan. Flame should be medium/low setting.
12. Add freshly chopped coriander leaves and mix well. Turn off the gas.
13. Garnish with sev & pomegranate seeds. Serve immediately.
