Churma Ladoo without Frying Recipe - चूरमा लड्डू बिना तले रेसिपी - Priya R - Magic of Indian Rasoi

Churma Ladoo is a traditional mithai offered to Lord Ganesh. Made from wheat flour, jaggery and ghee it tastes absolute divine. It is called churma ladoo as the first process of frying wheat flour balls is then broken down to pieces (make churma) and then rolled in to ladoo shape with jaggery and ghee. In this recipe variation we are not frying the flour balls and instead it is roasted. It tastes very similar to the traditional ladoo. Do check it out!

INGREDIENTS:

1 cup coarsely ground wheat flour
¼ cup + 1 tbsp ghee + for greasing
⅛ cup water
¾ cup jaggery
2 tbsp pieces of almonds, cashew nuts & black raisins
2 tsp poppy seeds
¼ tsp cardamom powder
1 tbsp desiccated coconut

SERVES: Makes 350 g Churma Ladoo
PREPARATION TIME: 25 min
RESTING TIME: 1 h 
COOKING TIME: 14 min
SETTING TIME: 30 min
TOTAL TIME: 2 h 9 min
* 1 CUP = 237 ML

METHOD:

  1. Mix coarsely ground wheat flour & ¼ cup melted ghee.
  2. Now add water as required to knead dough to medium stiff.
  3. Rest for 30 min.
  4. Divide into 2 balls.
  5. Roll one ball to thin roti on rolling board using a rolling pin. 
  6. Roast on tawa on medium flame for 4-5 min.
  7. Take it out on plate.
  8. Prepare other roti in same way (repeat step 5-7). 
  9. Break rotis to pieces & put in a bowl. 
  10. Allow to cool down for 15-20 min.
  11. Grind to fine powder in mixer grinder. 
  12. Transfer to a bowl & churma mixture is ready.
  13. Heat 1 tbsp ghee in a pan. 
  14. Add jaggery & cook on low flame till jaggery melts stirring continuously. 
  15. Add pieces of almonds, cashew nuts & black raisins, poppy seeds, cardamom powder.
  16. Add 1 tbsp desiccated coconut in churma mixture. 
  17. Now pour hot jaggery mixture in churma mixture.
  18. Mix using a spatula.
  19. Allow mixture to cool down for 5-10 min till it is manageable by hands.
  20. Take a small amount of mixture in greased hands & roll to ladoo shape.
  21. Roll ladoo in 1 tsp poppy seeds to decorate (optional).
  22. Transfer to a plate.
  23. Prepare rest of ladoos in same way (repeat step 20-22 till all mixture is finished).
  24. Allow to set for 30 min & then it is ready!
  25. Store in airtight container for 7 days.
