Methi Rava Mathri Recipe - Suji Khasta Mathri Recipe - 1
Methi Rava Mathri is an Indian savoury fried snack made from flour and spices. Fat is usually added in a good quantity to make it crispy. In this recipe we show a variation in the traditional mathri which is made using single flour - all purpose flour or maida. In this recipe we are using Rava or Semolina. It gives it an extra crunchy taste and it is also healthier than refined flour. Methi or fenugreek leaves are added to enhance flavours. INGREDIENTS:

1 cup rava (semolina)
½ cup maida (all purpose flour)
2 tbsp kasoori methi (dried fenugreek leaves)
½ tsp ajwain
½ tsp coarsely ground black pepper
Little more than ½ tsp salt or to taste
¼ cup ghee/oil
⅓ cup water or as required
Oil for frying

SERVES: Makes 275 gm Mathri
PREPARATION TIME: 12 min
COOKING TIME: 25 min
RESTING TIME FOR DOUGH: 30 min
TOTAL TIME: 1 h 7 min
* 1 CUP = 237 ML

METHOD:

  1. Mix rava, maida, kasoori methi, ajwain, coarsely ground black pepper, salt, & ghee till smooth.
  2. Knead medium stiff dough using required water.
  3. Cover & rest for 30 min.
  4. Knead again for 1-2 min till soft.
  5. Make small balls.
  6. Flatten between palms to make small puri shapes. You can also make a bigger roti & cut to desired shapes or make use of rolling board & pin to make small puris.
  7. Heat oil for deep frying & reduce flame to low.
  8. Divide mathri in required lots for frying so as to accommodate them in oil comfortably. 
  9. Fry on low flame for 10-12 min. Stir & turn intermittently. 
  10. Take out on paper napkin once golden in colour. 
  11. Fry remaining lot in same way.
  12. Let it cool down & store in airtight container for 10-12 days.
