Gujarati Mango Kadhi  - Fajeto Recipe - गुजराती आम कढ़ी - फजेतो रेसिपी - Priya R - Magic of Indian Rasoi

Gujarati mango kadhi is a traditional curry made from mangoes, curd & chickpea flour. You can eat it with plain rice, pulao or khichdi. It is called fajeto in local language. It tastes very yummy & it is also healthy. Usually made during summer season when mangoes are in abundance this is a perfect seasonal recipe to try.

INGREDIENTS:

1/4 cup curd
1/2 cup mango pulp
1 1/2 tbsp chickpea flour/besan
7-8 fenugreek seeds/methi dana
7-8 curry leaves
2-3 cloves/laung/laving
1 dried whole red chilli/sukhi lal mirchi
1/2 - 1 tsp green chillies & ginger paste
1/4 tsp mustard seeds/rai
1/8 tsp cumin seeds/jeera
1/8 tsp asafoetida/hing
1 tbsp chopped green coriander leaves
1 tsp sugar (optional)
2 cups water
1 tbsp oil
salt to taste

SERVES: 2-3 persons
PREPARATION TIME: 5 min
COOKING TIME: 8 min
TOTAL TIME: 13 min
* 1 CUP = 237 ML

METHOD:

1. In bowl mix curd & chickpea flour.
2. Add water, salt to taste & mango pulp. Mix well & keep aside.
3. In a pan, heat oil. 
4. Add mustard seeds & allow it to crackle. 
5. Add cumin seeds, asafoetida, cloves, dried whole red chilli, fenugreek seeds, green chillies & ginger paste & curry leaves. Mix well.
6. Switch off the flame. Allow the tempering to cool for 2 mins.
7. After 2 mins, add kadhi mixture. Switch on the flame. Let it come to boil on high flame. Stir continously.
8. After it comes to boil, lower the flame & cook for 5 mins. Stir intermittently
9. Add sugar & mix.
10. After 5 mins, Mango Kadhi is ready. Switch off the flame.
11. Lastly, add chopped green coriander leaves & mix.
12. Fajeto or Gujarati Mango Kadhi is ready! Serve with pulav, plain rice or khichdi.

TIPS:

1. For sour taste, use 1-2 days old curd.
2. Adding salt in curd mixture will ensure kadhi doesn't curdle while cooking.
3. You can use any mango variety. I have used kesar. This is 2 mangoes pulp. 
4. Allow the tempering to cool for 2 mins before adding kadhi, it will avoid chances of getting curdled.
5. Mango is already sweet you can skip sugar.
