Rajbhog Ice Cream Recipe - Homemade Ice Cream - राजभोग आइसक्रीम रेसिपी - Priya R - Magic of Indian Rasoi

Rajbhog Ice Cream is a rich dry fruits ice cream made from milk, cream, almonds, pistachios, cashew nuts, cardamom powder & saffron. In this homemade ice cream make instant ice cream using GMS & CMC powder which are easily available in the market. You will also need non dairy whipping cream. Do try this wonderfully rich ice cream at home this summer.

INGREDIENTS:

250ml milk at room temperature
1 1/2 tbsp milk powder
1/2 tbsp + 1 tsp corn flour
1/2 tbsp + 1 tsp GMS powder
1/8 tsp CMC powder
5 tbsp sugar
Kesar milk (1/4 tsp saffron soaked in 2 tbsp milk for 30 min)
1/8 tsp cardamom powder
1/2 cup non dairy whipping cream
1/8 tsp yellow food colour (optional)
1/4 cup finely chopped almonds (deskinned)
2 tbsp pieces of cashew nuts
2 tbsp pistachio clippings

SERVES: Makes approx 1L Rajbhog ice cream
PREPARATION TIME: 10 mins
COOKING TIME: 5 mins
TOTAL TIME: 15 mins + freezing time (approx 14 hours)
* 1 CUP = 237 ML

METHOD:

1. In a bowl mix 50ml milk, milk powder, cornflour, GMS powder & CMC powder. There should be no lumps. Use blender if required. 
2. Heat 200ml in a pan.
3. Add sugar, mix & allow milk to boil & sugar to melt.
4. Pour the prepared mixture & kesar milk. Mix - there should no lumps.
5. Cook till 2 boils & then switch off flame.
6. Add cardamom powder & allow ice cream base to cool down completely.
7. Once cooled down blend the ice cream base with blender to make it smooth.
8. Transfer to air tight container & put in freezer for 8 hours.
9. Transfer set ice cream to a big bowl.
10. Add non dairy whipping cream, yellow food colour & whisk it with hand mixer for 4-5 min till it doubles in volume. You can also do this process in mixer grinder.
11. Add finely chopped almonds, pieces of cashew nuts, pistachio clippings & mix. Keep few almonds & pistachio clippings aside for garnish.
12. Transfer rajbhog ice cream to air tight container.
13. Tap it lightly to level.
14. Close the lid & put in freezer for 5-6 hours for final setting.
