Instant Jalebi is popular sweet dish made using all purpose flour which is deep fried in concentric circle shapes using a piping bag or cloth & then dipped in sweet syrup. They are served hot with rabri/dahi or just as a separate sweet dish. In this recipe you can make jalebi quickly & with little fermentation. Though the frying of jalebis & making perfect concentric round shape is difficult to master you can practice & get it right very soon. In this recipe there is no use of yeast or hydro powder generally used to ferment or make jalebis crispy. You can get the same results without this ingredients - crispy from outside & filled with syrup inside. Jalebis are popular at festivals like Diwali, Eid, Holi, etc & are also popular at weddings & ceremonies. Do try this delicious sweet at home today!

INGREDIENTS:

For Jalebi batter:

1/2 cup maida/all purpose flour
1/2 cup 1 day old curd/dahi
Water as required
2-3 pinch saffron yellow food colour
1/8 tsp baking soda

For Syrup:

1 cup sugar
3/4 cup water
1/8 tsp cardamom powder
2-3 pinch saffron yellow food colour

Ghee/Oil for frying
Pistachio clippings & rose petals for garnish

SERVES: Serves 4-5 people 
PREPARATION TIME: 12 Min
COOKING TIME: 30 Min
TOTAL TIME: 42 Min
* 1 CUP = 237 ML

METHOD:

Making Jalebi Batter:

1. In a large bowl take maida/all purpose flour & slowly add curd/dahi & mix.
2. Use water as required & prepare thick dosa like batter.
3. Cover & keep it in warm place to ferment for 2-3 hours.

Making Syrup:

1. In a pan boil water & sugar.
2. Once it boils cook for 3-4 min till it becomes little thick - there is no need to check any string consistency.
3. Switch off flame & add cardamom powder & saffron yellow food colour & mix.

Making Jalebis:

1. Beat the jalebi batter for 2-3 min.
2. Add saffron yellow food colour & mix.
3. Just before frying add 1/8 tsp baking soda & mix.
4. Pour it in piping bag/jalebi maker & cut piping bag as thick as desired.
5. Pour jalebi batter in concentric circles in hot oil/ghee. Keep flame low.
6. Fry till crispy on both sides on low-med flame.
7. Once done transfer it to syrup.
8. Lightly press jalebi in syrup keeping it in for 30-60 sec.
9. Take out jalebis from syrup on to plate.
10. Prepare all jalebis in same way.
11. Serve crispy, juicy & hot jalebis garnished with pistachio clippings & rose petals.

TIP:

1. Ensure syrup is at room temperature before putting jalebis inside.
