INGREDIENTS:
2 cups Whole Wheat Flour/approx 200g
5 tbsp melted ghee
2 tbsp rava/fine semolina
1 tsp coarse black pepper
1 tsp ajwain/carom seeds
1 tsp salt or to taste
1/2 cup water approximately
oil for frying
SERVES: 350g Whole Wheat Namak Pare
PREPARATION TIME: 15 min
COOKING TIME: 30 min
TOTAL TIME: 45 min
* 1 CUP = 250 ML
METHOD:
1. In a bowl, add whole wheat flour, fine semolina, black pepper, carom seeds, salt and melted ghee.
2. Using water knead into a soft dough like paratha.
3. Cover and rest this dough for 30 mins.
4. After 30 mins, knead the dough again for 1-2 mins and make it soft.
5. Take a tennis ball size dough mixture.
6. Roll it into thin roti approx 2mm thickness.
7. Cut into diamond shape pare using knife or pizza cutter.
8. Heat oil for deep frying.
9. Once the oil is hot, lower the flame and add namak pare in batches.
10. Keep stirring to fry evenly on low flame for approximately 5-7 minutes.
11. Once light golden in colour, remove the pare on paper napkin.
13. Fry the remaining namak pare in same way.
14. Allow it cool completely and store in air tight container for 10-12 days.
15. Enjoy with a cup of tea!
Tip: For crispy texture, use hot ghee instead of oil for mixing in dough.
