Kaju Anjeer Roll is a dry fruit rich sweet made using cashew nuts and dried figs. This mithai is made for festivals and special occasions and often gifted to friends and relatives. Though it seems difficult to make you can make this sweet at home with this easy to follow recipe. Dried figs paste is rolled in to cashew nuts and sweet mawa mixture and decorated with poppy seeds (khus khus) or silver leaf. The layers of fig is visible from the sides and it looks lovely. They are a treat to the eyes as well as taste buds. Do make this for your loved ones this festival season.

INGREDIENTS:

6 dried figs (anjeer)
1/3 cup condensed milk
1/2 cup cashew nuts powder
1/2 cup khoya (mawa, unsweetened)
1 tsp ghee (clarified butter)
2-3 tsp poppy seeds (khus khus)
2-3 tsp pistachio clippings (optional)
3-4 pinch yellow food colour (optional)

SERVES: 270 gm Kaju Anjeer Roll
PREPARATION TIME: 10 Min
COOKING TIME: 10 Min
TOTAL TIME: 20 Min
* 1 CUP = 240 ML

METHOD:

1. In a bowl, add dried figs (anjeer) & soak it in lots of water for 2-3 hours.
2. Remove the water and finely cut the soaked figs.
3. Grind figs to a smooth paste in mixer grinder. 
4. Add 1 tsp ghee (clarified butter) in a pan.
5. Put the fig mixture and cook till it dries up.
6. Take it out in a bowl and allow to cool down completely.
7. In a separate pan, take condensed milk, cashew nuts powder & khoya (mawa, unsweetened). 
8. Turn on the flame. Mix well and cook for 3-4 min stirring constantly till it leaves the sides of the pan.
9. Cook for 1-2 min more and switch off flame.
10. Add yellow food colour (optional) & mix well. 
11. Take out mixture in a bowl and allow it to cool down completely.
12. When both mixture cool down take a ball out of cashew nut mixture and roll it to thick roti shape between sheets of plastic.
13. Open the plastic layer & spread a layer of fig mixture over it using hands.
14. Roll it tightly & seal the sides.
15. In a separate plate take poppy seeds (khus khus) & for decoration.
16. Lightly roll the Kaju Anjeer roll in to poppy seeds and pistachios plate.
17. Put the roll in an airtight container.
18. In same way 2 more Kaju Anjeer roll can be made from this mixture.
19. Put the lid and put in fridge for 4-5 hours to set.
20. Cut Kaju Anjeer Roll in to pieces.
21. You can store Kaju Anjeer Roll in fridge in airtight container for 4-5 days.
