Gujarati Ghatiya / Sev Recipe - गुजराती गांठिया / सेव रेसिपी - Priya R - Magic of Indian Rasoi

Gujarati Ghatiya is a popular gram flour snack shaped like sev or strands of flour deep fried in oil. Sev is made across India using different methods and process. Some are very spicy and some tangy and some plain. This Gujarati Gathiya is little spicy and very flavourful. It is made especially during festival seasons like Diwali and also in general enjoyed in all households. You can eat this wonderful snack with chopped onions or use it in chaat or bhel or eat it just like that. You need a Sev or Chakli Mould or Maker to make this gram flour snakes! INGREDIENTS:

2 Cup Chickpea Flour (Besan)
2 tbsp + 1 tsp oil plus Oil for frying/greasing
1/8 tsp carom seeds (lightly crushed between palms)
1/2 tsp salt or to taste
1/2 tbsp red chilli powder
1/4 tsp turmeric powder
1/2 tsp chaat masala powder
1/2 tsp black pepper powder
4 tbsp water

SERVES: Makes about 188 gm Gujarati Ghatiya / Sev 
PREPARATION TIME: 5 Min
COOKING TIME: 8 Min
TOTAL TIME: 13 Min
* 1 CUP = 237 ML

METHOD:

1. In a large mixing bowl, Chickpea Flour (Besan), 2 tbsp oil, carom seeds, salt, red chilli powder, turmeric powder, chaat masala powder, black pepper powder and mix well. 
2. Adding 1/2 to 1 tbsp water at a time knead a medium stiff dough. 
3. Add 1 tsp oil and mix well. 
4. Divide the dough in to 2 parts and immediately fry the sev.
5. Grease the sev maker/mould nicely from inside and using a big hole attachment and using one part of dough in sev maker, allow sev to fall in oil. Circle the sev maker over the oil to evenly spread the sev. Keep flame on low while putting sev.
6. Now turn the flame on high and using a laddle separate the sev sticked together and fry it till crispy and golden.
7. After 2-3 min take it out on paper napkin.
8. Fry the remaining gathiya in the same way.
9. Allow the Gujarati Ghatiya to come to room temperature and then you can store it in air tight container for 10-15 days.
