Gujarati Bajri Methi Dhebra is a delicious snack enjoyed during winter when Bajri or Pearl Millet flour is generally eaten. It is easy to make and can even be had by health conscious people by using the Roast method instead of deep frying. Bajri Methi Dhebra is a small flat bread made from Pearl Millet Flour & Green Fenugreek Leaves along with little Bengal Gram Flour, Yoghurt, Jaggery & other spices. It can be eaten with tea as snack along with Ketchup/Green Coriander Chutney or had as main meal with Yoghurt or Curd. Do try this delicious Gujarati Snack Recipe!

INGREDIENTS:

1/2 Cup Bajri Aata (Pearl Millet Flour)
2 Tbsp Bengal Gram Flour (Besan)
1 Tbsp Yoghurt (Curd, Dahi)
1 Tbsp Oil + Little oil for Greasing + Oil for Deep Frying
1/3 Cup Finely Chopped Fenugreek Leaves (Methi)
1 Tsp Green Chillies & Ginger Paste
1/2 Tsp Sesame Seeds (Til)
1/8 Tsp Turmeric Powder (Haldi)
1/2 Tbsp Gud (Jaggery)
Salt to taste
Little Water for kneading dough


Serves: Makes 6-7 Bajri Methi Dhebras (Serves 2 people)
Preparation time: 15 min
Cooking time: 15 min
* 1 Cup = 237ml

METHOD:

1. In a bowl mix well Bajri Aata (Pearl Millet), Bengal Gram Flour (Besan), Yoghurt (Curd, Dahi), 1 Tbsp Oil, Finely Chopped Fenugreek (Methi), Green Chillies & Ginger Paste, Sesame Seeds (Til), Turmeric Powder (Haldi), Gud (Jaggery), and Salt to taste.
2. Add little by little water as required and form a soft dough.
3. Use little oil to smoothen the dough and remove stickiness.
4. Using greased palms take little dough (about a spoonful), roll it in a ball shape and then lightly flatten it like a Tikki or Paratha and place it in a greased plate.
5. Make rest of Dhebra in same way.
6. Heat oil in a deep pan for frying.
7. Once oil is hot lower the flame and put 3-4 Dhebra at a time for frying.
8. Fry Dhebra till golden on low to med flame stirring and turning in between. Once batch takes 5-7 min for frying.
9. Once done take it out on paper Napkin.
10. Fry rest of Dhebra in same way.
11. Bajri Methi Dhebra are ready to serve!

TIPS:


1. If you prefer you can also make Dhebra like a paratha shape using little wheat flour while rolling. You can then roast it on Flat Tava using little oil on both sides. This is the non deep fried version of Bajri Methi Dhebra and can be even had by health conscious people.
2. This recipe makes about 6-7 Dhebra. You can easily double the ingredients to make more.
3. Before frying check if oil is sufficiently hot by putting a small amount of dough and if it comes up immediately. Fry Dhebra on low-med flame or else it will be uncooked in the core.
