Badam Burfi or Almond Barfi is prepared with Sugar or with Mawa/Condensed Milk. Both are different variation and tastes great. With the nutritional value of Almonds this sweet sure is healthier variety! Here we prepare Badam Burfi with Sugar in a similar way as Kaju Katli is prepared. It is very easy recipe and it makes quickly. Make this recipe this festive season for your family and spread the love!!

Ingredients:

1 Cup Good Quality Almonds (Badam)
1/2 Cup Sugar
1/4 Cup Water
2 Tbsp Milk Powder
Silver leaves for decoration (optional)

Serves: Makes about 350-400 gm Badam Burfi
Preparation time: 30-40 min
Soaking + Drying time: 2 hours
Cooking time: 8 min
Setting time: 2-3 hours
* 1 Cup = 240 ml

Method:

1. Soak Almonds in hot water for 1 hour. You may also soak it overnight in water at room temperature. Peel off the skin and spread it on a towel to remove excess water. Allow it to air dry for 30 min to 1 hour.
2. Grind Almonds to a smooth paste. Almonds will give out oil and the mixture will turn in to a paste!
3. To make Syrup boil Sugar and Water in a Pan. Once it starts to boil lower flame to medium heat and cook for 3-4 min. After 3-4 min switch off flame. Check if 1 String Consistency is achieved by placing a drop of Syrup between Index Finger and Thumb. If 1 string consistency is not achieved cook for 1 more min and then check again.
4. Now put the Almond Paste & Milk Powder in to Syrup and mix till it leaves the sides of the Pan and rolls in to a ball shape dough. Do not turn on the flame while mixing!
5. Transfer mixture to a bowl and allow it to cool for 5-7 min. Do not let it cool completely or it will harden.
6. After 5-7 min the Mixture will be manageable by hands. Take one small ball out of it and roll it like Roti with 1/4" to 1/2" thickness with the help of rolling board and rolling pin. You may grease the rolling board with Ghee (Clarified butter) to make rolling easy. Now cut it in diamond shape using Knife or Cookie Cutter.
7. Place the Badam Burfi in a plate. Make remaining Badam Burfi in similar way.
8. Transfer the Badam Burfi to air tight container once cooled completely and allow it to set for 2-3 hours. You may even place it in refrigerator.
9. Once set decorate the Badam Burfi with Silver Leaf (optional).
10. Delicious Badam Burfi is ready to serve!
