Churma Ladoo with Sugar Recipe - 1
Churma Ladoo is a traditional mithai offered to Lord Ganesh. Traditionally made from jaggery or gud this recipe uses sugar instead. Made from wheat flour, sugar and ghee it tastes absolute divine. It is called churma ladoo as the first process of frying wheat flour balls is then broken down to pieces (make churma) and then rolled in to ladoo shape with sugar and ghee. Do try it today!

INGREDIENTS:

2 cups coarsely ground wheat flour
1 cup powdered sugar
1 cup ghee
¼ cup dry fruits (chopped pieces of cashew nuts, almonds, pistachios) & black raisins
¼ cup grated dry coconut
½ cup + little more water
2 tbsp besan (gram flour)
½ tsp cardamom powder
½ tsp poppy seeds
4-5 pinch grated nutmeg
Oil/ghee for frying

SERVES: Makes 715 g (approx) Churma Ladoo 
PREPARATION TIME: 28 min
COOKING TIME: 37 min
RESTING TIME: 1 h 
SETTING TIME: 1 h
TOTAL TIME: 3 h 5 min
* 1 CUP = 237 ML

METHOD:

Churma Dough:

  1. In a pan heat ⅓ cup ghee.
  2. Add 2 tbsp besan (gram flour) & stirring continuously cook for 2-3 min.
  3. Switch off the flame.
  4. In a large mixing bowl take 2 cups coarsely ground wheat flour.
  5. Pour ghee & besan mixture in it.
  6. Mix it with a spatula first & then mix it nicely with hands. 
  7. Using about ½ cup + little more water knead a medium stiff dough.
  8. Allow it rest for 30 min.
  9. Churam dough is ready!

Making Churma:

  1. Knead the dough for 1-2 min.
  2. Make a small muthiya (oblong shaped balls) using little mixture. Keep muthiya little thin (like hot dog) so it cooks well inside while frying.
  3. Put it in a plate.
  4. Prepare all muthias in same way. (steps 2-3 above).
  5. Heat oil/ghee in a kadai for frying & then lower flame.
  6. Fry muthias in batches on low flame for 12-15 min till golden brown stirring occasionally. 
  7. Take it out in mixing bowl. 
  8. Fry all muthias in same way. (steps 6-7 above).
  9. Allow muthias to cool down completely.
  10. Break muthias with hands & then grind in mixer grinder to powder.
  11. Take it out in large mixing bowl & churma is ready!

Making Churma Laddu:

  1. Add 1 cup powdered sugar to Churma & mix well.
  2. Add ¼ cup dry fruits (chopped pieces of cashew nuts, almonds, pistachios) & black raisins, ¼ cup grated dry coconut, ½ tsp cardamom powder, 4-5 pinch grated nutmeg & mix.
  3. Heat ⅓ + ¼ cup ghee in a pan till it is very hot.
  4. Switch off flame. 
  5. Pour it in churma mixture & mix using a spoon first & then mix with hands.
  6. Roll it to laddu & check if it hold well. Add more hot ghee if required.
  7. Using a mould or hands make laddu from the mixture.
  8. Put it in a plate.
  9. Prepare all laddus in same way. (Steps 7-8 above).
  10. Decorate with ½ tsp poppy seeds.
  11. Set it for 1 hour & then Churma Laddu is ready. 
  12. Store in airtight container for 7-10 days.
