Falooda is a delicious milk based dessert popular across India & is made using vermicelli, basil seeds, flavours & topped with ice cream & seasonal fruits or jelly. In this recipe you can make instant falooda mix which is usually available in the market in nice packets. You can quickly make this instant mix & use it with milk & prepare falooda whenever you want. INGREDIENTS:

Kesar Pista Falooda Instant Mix:

1/3 cup sugar
1/2 tbsp corn flour
⅛ tsp saffron strands
2 pinches powder yellow food color or 1/2 tsp liquid yellow food color (optional)
1 tsp sabja seeds/basil seeds/tukmaria
10 pistachios & 5 almonds chopped
1/4 cup vermicelli (plain & not roasted)

Kesar Pista Falooda:

500ml full fat milk
100ml water
Kesar Pista falooda mix 70g
3 scoops vanilla ice cream or rajbhog ice cream
½ tsp pistachios clippings
4-5 saffron strands

SERVES: Makes 70g Kesar Pista Falooda Mix / 3 glasses of Mango Falooda

COOKING TIME: 12 min
OTHER TIME: 6 h (refrigeration time)
TOTAL TIME: 6 h 17 min
* 1 CUP = 237 ML


METHOD:

Kesar Pista Falooda Mix:

1. Grind sugar, corn flour, saffron & yellow food color in mixer grinder for 2-3 sec to coarse mixture.
2. Mix with spoon.
3. To assemble kesar pista falooda mix, first of all we layer sugar mixture, then add sabja seeds/basil seeds/tukmaria over it, then pistachios & almonds & lastly layer vermicelli over it. 
4. Cover with lid & instant kesar pista falooda mix is ready! 
5. Store it in refrigerator for 1 month or in freezer for 2-3 months.

Kesar Pista Falooda Mix

1. Heat full fat milk with water in a pan to boil.
2. Lower flame & pour the kesar pista falooda mix in to it.
3. Stirring constantly allow milk to come to boil again.
4. Lower flame & cook for 8-10 min.
5. Switch off flame & mix.
6. Transfer kesar pista falooda to a bowl & allow it to come to room temperature & then put it in refrigerator to chill for 5-6 hours.
7. To serve kesar pista falooda, pour it in a glass
8. Put 1 scoop vanilla ice cream or rajbhog ice cream over it in each glass.
9. Garnish with pieces pistachio clippings & saffron strands.
10. Kesar pista falooda is ready!

TIPS:

1. Putting corn flour in mixer grinder ensures it mixes well with sugar.
2. Use vermicelli available in small pieces - it should plain vermicelli & not roasted.
3. If take toned milk use 600ml milk & skip water.
