Soft Bhakarwadi (Baroda Style) is a famous fried snack made from spicy & sweet gram flour stuffed long rolls. They are soft & melt in the mouth & are famous from Vadodara city in Gujarat, India. They are slightly different that the Maharashtrian Bhakarwadi wherein they are softer & are about the size of finger rather than small rounds. They are absolute delight to have & the famous ones are available at Vadodara. And if you cannot manage to get these you can make this at home from scratch. They are deep fried, however, if you wish you can also bake it till golden brown in oven! Moreover they are easy to make. Do try it today!

INGREDIENTS:

Stuffing:

1 Cup crushed Papdi (or any Bhujia)
1/2 Tbsp Oil
1/4 Cup Dates and Tamarind Chutney (Khajur Imli Chutney)
1 Tbsp Powdered Sugar
1 Tbsp Coarsely grinded Coriander Seeds
1 Tsp Red Chilli Powder
1 Tsp Corinader Powder
1/2 Tsp Garam Masala Powder
1 Tsp Coarsely Grounded Fennel Seeds (Sauf)
1 Tsp Sesame seeds
2 Tbsp roughly chopped pieces of Cashew nuts and Almonds
1 Cup Crushed Papdi
1 Tbsp Golden Raisins
3 - 3 1/2 Tbsp water

Outer layer:

3/4 Cup Gram Flour (Besan)
1/4 Cup Wheat Flour
2 Tbsp Oil
1/4 + 1/8 Cup Water (approx)
Salt to taste

Cornflour Slurry:

1/4 Cup Water
1/2 Tbsp Corn Flour / Maida (All Purpose Flour)

Oil for deep frying

SERVES: makes approx 239g Soft Bhakarwadi
PREPARATION TIME: 20 Min
COOKING TIME: 15 Min
TOTAL TIME: 35 Min
* 1 CUP = 237 ML


METHOD:

Making the Stuffing:

1. In a pan heat oil and add dates and tamarind chutney, powdered sugar, coarsely grinded coriander seeds, red chilli powder, corinader powder, garam masala powder, coarsely grounded fennel seeds (sauf), sesame seeds, roughly chopped pieces of cashew nuts and almonds, crushed papdi and golden raisins. 
2. Mix everything. Keep flame low. 
3. When everything is mixed well, add water 1 spoon at a time. We need to add water only till the mixture gathers in to a ball. 
4. Cook only till the mixture becomes like a paste.
5. Soft Bhakarwadi stuffing is ready! Take it out in a bowl and let it cool down completely.

Making Cornflour Slurry:

1. In a bowl, mix corn flour & water well. Keep aside. 


Making Outer Layer:

1. In a bowl, mix gram flour, wheat flour, oil & salt to taste.
2. Using required water knead medium soft dough. Dough is ready for outer layer!

Making Soft Bhakarwadi:

1. divide dough in to two portion with greased hands.
2. Using wheat flour for dusting roll it to thin roti shape.
3. Make square shape by cutting off sides using a knife.
4. Using a brush apply water. 
5. Place a thick layer of stuffing on half of square leaving little space on all sides. 
6. Trim any excess dough using a knife. 
7. Soft bhakarwadi is little thick & long & should be about size of finger. 
8. Cut pieces of soft bhakarwadi. 
9. Transfer it to a plate. 
10. Prepare remaining bhakarwadi in same way. 
11. Dip the open sides of bhakarwadi in corn flour slurry & keep in plate (this step is optional).
12. Dip all bhakarwadi in same way & put in plate.
13. Put it in fridge for 30 min to set. 
14. Heat oil for frying & then lower flame. 
15. Fry bhakarwadi in batch of 4-5 on med-high flame till light golden. It takes around 1-2 min. 
Turn it over intermittently. 
16. Once Soft bhakarwadi turn golden in color. Take it out on a paper napkin.
17. Fry remaining bhakarwadi in same way. 
18. Soft bhakarwadi is ready! 
19. Allow it to cool down completely & then store in air tight container for about 7 days. 
20. Baroda style soft bhakarwadi is ready.
