Mohanthal is a traditional Indian sweet popular in Rajasthan and Gujarat. It is made from Chickpea flour, mawa and sugar. It is traditionally made in pieces and is a solid block which can be held in hands. In this recipe we show you how to make this delicious sweet in a loose halwa style form. INGREDIENTS:

For Besan Mixture:

3 tsp ghee (clarified butter)
3 tsp milk
1 cup coarsely ground gram flour (besan)

For Sugar Syrup:

1/2 + 1/8 cup sugar
1/2 cup water
1/8 tsp cardamom powder
1 tbsp mixed dry fruits powder (almonds and cashew nuts)
1-2 pinch nutmeg powder
10-12 strands of saffron

For Loose Mohanthal:

1/2 cup ghee (clarified butter)
100 gm unsweetened khoya (mawa)
1-2 tsp pistachio clippings for garnish

SERVES: Makes about 426gm of Loose Mohanthal
PREPARATION TIME: 15 Mins
COOKING TIME: 20 Mins
TOTAL TIME: 35 Mins
* 1 CUP = 240 ML

METHOD:

For Besan Mixture:

1. Take ghee & milk in a small pan. Allow it come to boil.
2. Once it boils switch off flame. 
3. In a separate bowl take coarsely ground gram flour (besan). 
4. Pour the prepared ghee-milk mixture in centre of flour by creating a pit. 
5. Don't mix at the moment. Just cover it with flour from top and sides. 
6. Cover it with a plate & allow to rest for 10-15 min.
7. After 15 min mix besan with a spoon. And then make crumbly texture using hands & break any lumps. Make besan smooth by rubbing between hands. Keep aside.


For Sugar Syrup:

1. Take sugar & water in a pan. Switch on flame on high & allow it come to boil.
2. Add cardamom powder, saffron,nutmeg powder & mixed dry fruits powder.
3. Once it starts to boil lower flame, mix well & cook for 7-8 min on low flame. 
4. We will not check any string consistency but just cook for 7-8 min.
5. After 7-8 min the syrup will become thick & sticky. Switch off flame. 


For Loose Mohanthal:

1. Now take ghee (clarified butter) in a kadhai. Add prepared besan in it. 
2. Cook for 8-10 min on low flame till golden brown to brown colour. 3. Once besan is cooked & it is nice brown colour, add unsweetened khoya (mawa) & cook for 1 min. 
4. Add prepared syrup, switch off flame & mix for 3-4 min.
5. If required switch on flame & cook for 3-4 min till halwa consistency. 
6. Switch off flame. Once loose mohanthal cools down it will
become thick.
7. Serve loose mohanthal hot garnished with pistachio clippings! 

Tips:

1. You can grind Gram Dal in flour mill or mixer grinder.
