Gud ke pare or toshe is a famous North Indian recipe made during winters or special occasions. It is small stick shaped savoury snack coated with melted jaggery (gud). It is a very easy recipe using Gud and there is no need to check any string or tar (consistency). You can make this for snacks or even on special occasions. Gud is known to clear throat problems during winters and so this sweet is very famous during winters. Do try it today.

INGREDIENTS:

1 1/2 cup maida (all purpose flour)
1/2 cup grated gud (jaggery approx 100gm)
1/4 cup + 1/2 tbsp ghee
1 tsp coarsely ground saunf (fennel seeds)
2-3 pinch cardamom powder
1/4 + 1/8 cup water approx
Oil for deep frying

SERVES: approx 370gm Gud Pare 
PREPARATION TIME: 20 Min
COOKING TIME: 15 Min
TOTAL TIME: 25 Min
* 1 CUP = 237 ML

METHOD:

1. In a bowl, mix maida & 1/4 cup ghee well. 
2. Add water as needed & knead into medium stiff dough. Cover & allow it to rest for 10-15 mins. 
3. After 15 min, knead again for 1-2 min & make the dough smooth. 
4. Divide the dough into 3 equal portions.
5. Roll each portion into thick paratha shape.
6. Using a pizza cutter or sharp knife cut thin & long vertical strips & then into small horizontal strips.
7. Shift the pare pieces to a plate & prepare the remaining pare in the same way.
8. Heat oil for deep frying & then turn the flame low. 
9. Add pare into the oil in 2 batches. Fry till golden in colour.
10. Keep stirring in between & each batch takes approx 7-8 min to fry. 
11. Remove on a paper napkin once fried.
12. Heat 1/2 tbsp ghee in another broad pan. 
13. Add saunf, cardamom powder & jaggery. 
14. Keep the flame low & cook only till jaggery melts & starts to bubble. 
15. Switch off the flame & add fried pare. 
16. Mix gently & allow jaggery to coat pare evenly. 
17. Let it cool for 1-2 hours. 
18. Separate Gud Pare from each other & store in air tight container.
19. Gud Pare can be enjoyed for 7-10 days!

TIPS:

1. If you want a thicker layer jaggery on pare then use 1/4 grated jaggery more.
