Shakarpara is an Indian snack popular in Gujarat and Maharashtra. Also known as Shankarpali it can be savoury or sweet. In this recipe learn how to make this easy snack in sweet form without making any sugar syrup. It is an easy to make recipe if ingredients are measured accurately. INGREDIENTS:

250gm all purpose flour (maida) or 2 1/4 cup
1/3 cup powdered sugar
1/3 cup oil
1/2 tsp cardamom powder
1/3 cup water (approx to knead dough)
Oil for deep frying

SERVES: Makes approx 450gm Shakarpara
PREPARATION TIME: 10 Mins
COOKING TIME: 20 Mins
TOTAL TIME: 30 Mins
* 1 CUP = 237 ML


METHOD:

1. In a bowl add  all purpose flour (maida), powdered sugar, oil, cardamom powder & mix well. 
2. Now using water knead a medium stiff dough (approx 1/3 cup water).
3. Divide the dough in 4 equal parts. 
4. Now take one dough ball and keep rest of dough covered.
5. Roll it to 1/4 inch thick like a paratha. 
6. Using knife / pizza cutter cut parallel lines & then slightly slant parallel lines to give diamond shape.
7. Transfer shakarpare to a plate and keep them little apart so it doesn't stick to one another.
8. Prepare remaining Shakarpare in same way by rolling and cutting.
9. Heat oil for frying.
10. Check temperature of oil by putting one small dough ball in hot oil. It should come up slowly & not immediately. This temperature is perfect for frying Shakarpare.
11. Reduce flame & put Shakarpare. Fry Shakarpare in 2-3 batches - don't fry all together!
12. Stir Shakarpare intermittently & don't use high flame or else it will remain under-cooked from inside.
13. Each batch takes around 5-7 min for frying and fry Shakarpare till golden pink colour.
14. Take it out on paper napkin.
15. Fry remaining Shakarpare in same way.
16. Once Shakarpare comes to room temperature store it in air tight container & use for 10-12 days.
17. Crispy melt in mouth Shakarpare w/o chasni is ready!
