Eggless Chocolate Truffle Cake with Homemade Ganache is a delicious chocolate cake using Chocolate Ganache for frosting. In this recipe learn how to make this cake from scratch using homemade Ganache and it is very easy to follow for beginners. Ganache is a icing or frosting made using chocolate and cream. It is essential to melt chocolate at a very low heat using microwave or double boiler to get perfect results. As with any chocolate high heat can spoil the texture and it becomes unusable for making a ganache. The base for this cake is made using a cakemix or premix. INGREDIENTS:

For Chocolate Ganache:

300 gm Dark Chocolate
120 gm fresh cream
15 gm Salted Butter

For White Chocolate Ganache:

40 gm White Chocolate
20 gm fresh cream

4" Eggless chocolate cake (Recipe here)
Water for moistening the cake

SERVES: Makes about 750 gm Eggless Chocolate Truffle Cake 
PREPARATION TIME: 35 Min 
COOKING TIME: 2 Min
TOTAL TIME: 37 Min (Excludes refrigerator time)
* 1 CUP = 237 ML

METHOD:

Making Chocolate Ganache:

1. In a bowl lightly mix Dark Chocolate and fresh cream and microwave for 30 sec on HIGH.
2. Mix well to melt the chocolate. If there are lumps in chocolate microwave for 30 sec more.
3. Add butter and mix well.
4. Cover the bowl with cling wrap and leave it at room temperature for at least 4 hours.
5. After 4 hours the ganaches will become little thick. Use this for frosting the cake.

Making White Chocolate Ganache:

1. In a bowl mix White Chocolate and fresh cream and microwave for 30 sec on HIGH.
2. Mix well to melt the chocolate. If there are lumps in chocolate microwave for 30 sec more.
3. Cling wrap the White Chocolate Ganache till required.

Frosting the cake:

1. Trim off edges of the top of cake to remove any uneven portion.
2. Slice it in to 2 layers.
3. On a cake cutting board place the top layer of cake upside down.
4. Prick the layer of cake on topside using a fork at even intervals.
5. Spread plaint water evenly on cake using a brush.
6. Spread the ganache using piping bag starting from the centre of the cake and spreading towards the edges.
7. Put the bottom layer of cake over it with bottom side up.
8. Prick the layer of cake on topside using a fork at even intervals.
9. Spread plaint water evenly on cake using a brush.
10. Cover the sides walls of the cake with Ganache and then spread on top side of the cake starting from the middle.
11. Using a palette knife smoothen the cake on sides and top.
12. Fill any gaps with ganache. 
13. Repeat steps 11 and 12 till the cake is smoothened and covered well with ganache.
14. Wipe off any excess ganache on cake board.
15. Refrigerate the cake for at least 2 hours.
16. Microwave White Chocolate Ganache for 10 sec on HIGH so that it becomes flowy and drops easily for decorating the cake.
17. Using a No. 1 Writing Tip fill a piping bag with White Chococlate Ganache.
18. Drizzle the White Chocolate Ganache unevenly on the cake to give scribbled effect.
19. Place the cake back in refrigerator till further step.
20. Using a Open Star Nozzle fill Dark Chocolate Ganache in piping Bag.
21. Decorate the sides of the cake by making shell border.
22. Make small rosets on the top in a circle or as desired.
23. Refrigerate the cake for 5-6 hours before cutting.
24. Eggless Chocolate Truffle Cake is ready!


TIPS:

1. To make a good ganache ensure to use all ingredients at room temperature.
2. Chop and use the chocolate for making ganache. It will help in melting the chocolate faster.
3. Do not overheat the chocolate as it will spoil. If there are lumps microwave in batches of 30 sec and not more. Alternatively, you can use double boiler but do not heat the chocolate directly on flame.
4. Use a piping bag for spreading the ganache for good and even results. Alternatively you can use a spatula!
5. Use a cake refrigerated previously for 1 day.
6. You can also use a sugar syrup for moistening the cake. (Mix 2 Tbsp Sugar with 1/4 Cup Water).
7. Filling the ganache in piping bag becomes easier if the piping bag is put in a large mug or cup.
