Kaju Paan is a famous mithai and it is enjoyed by all. Kaju Katli stuffed with Gulkand and Soft Paan Supari makes it a delight. Everybody loves to have Desert and Paan after meals and this Mithai + Paan combination fulfills both desires in one. Do make this mithai this Diwali and enjoy with family and friends.

Ingredients:

100 gm Unsweetened Khoya (Mawa) (about 1/2 cup)
3 Tbsp Gulkand
2 Tsp Soft Supari
1 Tbsp Clipped Almonds (Badam)
1 Cup Cashew Nuts (Kaju)
1/2 Cup Sugar
1/4 Cup Water
Pinch Bright Green Food Colour
Silver leaf for Garnish (Optional)

Serves: Makes about 250 gm Kaju Paan Rolls
Preparation time: 20-25 min 
Cooking time: 10-12 min 
* 1 Cup = 237 ml

Method:

1. In a Pan on low flame add Unsweetened Khoya (Mawa), Gulkand, and Soft Supari. Mix well and once mixed transfer it to a bowl. Add Clipped Almonds and mix well. Allow the filling to cool down.
2. Grind Cashew Nuts to fine paste. Ensure mixer pot is completely dry and free from moisture.
3. To make Syrup (Chasni) heat Sugar and Water on high in a Pan and bring it to boil. Once it starts to boil simmer on medium flame and cook for 3-4 min and then switch off flame. Check if 1 String Syrup (Chasni) is ready by putting a drop of Syrup between Index finger and Thumb. If 1 String Syrup (Chasni) is not achieved cook for 1 min more and then check again.
4. Put Bright Green Food Colour to Syrup and mix well. This gives Paan like colour to the recipe!
5. Add grinded Cashew Nuts to the Syrup and mix well till the Mixture leaves the side of the Pan and becomes like a ball. Do not switch on the flame while mixing or the mixture will become hard!
6. Remove the Mixture in a bowl and allow it to cool for 5-7 min. Do not let the Mixture to cool down completely or it will become hard.
7. After 5-7 min the Kaju Mixture will become like a dough. Take one small ball out of it and roll it like Roti with help of rolling board and rolling pin. Roll the dough lightly and don't apply much pressure or else the Roti will break.
8. Take about 1-2 Tsp of Filling (Mawa mixture) and roll it in oblong shape like a hot dog. Place it near end of Roti. Now lightly roll the Roti around the filling. Ensure to roll for 1-2 times max!
9. Now Cut the extra Roti with the help of Knife or Pizza Cutter and put it back in dough. It can be reused.
10. Roll the Kaju Paan Roll lightly to ensure filling is sealed inside and does not come out. Now cut about 1" small Rolls out of the big roll and place it in an air tight container. Make rest of the Kaju Paan Rolls in the same way.
11. Put the air tight container in refrigerator for 1-2 hours to set the Kaju Paan Rolls.
12. Decorate the Kaju Paan Rolls with Silver Leafs (optional). Kaju Paan Rolls are ready to serve! Enjoy.
