Samosa is famous snack dish made across Asia and Middle East and everywhere the filling and the outer layer differs. The thing that is common is the triangle shape. Samosa is simply irresistible! If we talk about Punjabi Samosa it is filled with potatoes, peas and spices and it is deep fried. Here we have made an attempt to make a healthier variety of Samosa - Baked Mixed Vegetable Samosa. It has Potatoes, Carrots, Peas, Onions, French Beans and is baked instead of deep frying. Just make this for kitty parties, kids parties or preparing snacks for guests. You will just love this dish!

Ingredients:

2 Tbsp Oil + Oil for Greasing
1/4 Tsp Cumin Seeds (Jeera)
1/8 Tsp Asafoetida (Hing)
1 Finely Chopped Medium Sized Onion
1/4 Cup Boiled French Beans
1/4 Cup Shredded Carrot
1/4 Cup Boiled Peas
2 Tsp Green Chillies & Ginger Paste
1/8 Tsp Turmeric Powder
2 Tsp Sugar
1/2 Tsp Coriander Powder
1/4 Tsp Red Chilli Powder
1/4 Tsp Garam Masala
Salt to taste
1/4 Tsp Chaat Masala
2 Medium Sized Boiled & Grated Potatoes
1 Tbsp Golden Raisins
1/2 Tbsp Lemon Juice
2 Tbsp Finely Chopped Coriander Leaves
9 Medium Sized Samosa Patti

For Corn Flour Paste:

2 Tbsp Corn Flour
2 Tbsp Water

Serves: Makes 9 Mixed Vegetable Samosas
Preparation time: 30 min
Cooking time: 10 min
Baking time: 20 min
* 1 Cup = 237 ml

Method:

1. For the Stuffing heat Oil in a Pan and add Cumin Seeds (Jeera). Once Cumin Seeds turn golden, add Asafoetida (Hing) and Finely Chopped Onion. Saute Onions till light pink in colour on medium flame.
2. Add Boiled French Beans, Shredded Carrot, Boiled Peas, Green Chillies & Ginger Paste, Turmeric Powder, Sugar, Coriander Powder, Red Chilli Powder, Garam Masala, Salt to taste and mix well and keep flame on medium.
3. Add Chaat Masala, Boiled & Grated Potatoes, Golden Raisins and mix well. Cook for 3-4 min till all ingredients are well combined. Switch off flame.
4. Add Lemon Juice, Chopped Coriander Leaves and mix well. Let the mixture cool down completely.
5. For sealing Samosa prepare a fine paste mixing Corn Flour and Water.
6. Now take one Samosa Patti and fold one side of edge to form a triangle (with short side slightly raised out). While pressing the inside cone, fold again towards inside of the patti (2nd fold). This will give a cone shape to the patti with hollow in between.
7. Fill the hollow with Stuffing Mixture and fold the last flap of patti and seal all edges of Samosa Patti lightly greasing with Corn Flour Paste.
8. Make remaining Samosas as per Step 6 & 7.
9. Put the Samosas in a air tight container and put it in refrigerator for 30 min. You can store the Samosas before baking them for 1-2 days in refrigerator or 4-5 days in freezer.
10. Take a greased baking tray and lightly grease the top and bottom side of Samosas and place it in baking tray. Bake Samosas in pre-heated oven at 180C/350F for 20 min by baking 10 min on one side and then flipping Samosas over and again baking 10 min on other side.
11. Once Samosas turn golden take it out from Oven. Lightly grease the Samosas on both sides. This will help give Samosas shine.
12. Tasty Baked Vegetable Samosas are ready to eat. Serve hot with Green Coriander Chutney or Ketchup.
