Hariyali Pav Bhaji - Green Pao Bhaji Recipe - हरियाली पाव भाजी रेसिपी - Priya R - Magic of Indian Rasoi
Hariyali Pav Bhaji is a variation of the traditional pav bhaji made using green veggies like spinach, green tomatoes, green onions, etc. It is easy to make and very nutritious. The green vegetables used in this recipe are generally available in winters and thus this is a perfect winter special recipe. Serve hariyali pav bhaji hot with pav or bread and enjoy with your family.

INGREDIENTS:

100g flower chopped roughly (approx 1/2 cup)
1/2 cup roughly chopped cabbage
2 medium sized potatoes cut in large pieces
3-4 medium sized green tomatoes cut in large pieces
1/4 cup peas
1/2 cup water
Salt to taste
1 tbsp butter
2 tbsp oil
1/4 tsp cumin seeds
1/8 tsp asafoetida
5 green onions white part & green part chopped separately
2 chopped green chillies
5 cloves of garlic chopped
1 finely chopped big capsicum (bell pepper)
1/4 cup puree of spinach
1 tbsp pav bhaji masala (readily available in market)
1/4 tsp coriander powder
Water as required
Juice of 1/2 lemon

SERVES: Serves 2-3 people 
PREPARATION TIME: 15 Min
COOKING TIME: 25 Min
TOTAL TIME: 40 Min
* 1 CUP = 237 ML

METHOD:

1. Boil veggies - flower, cabbage, potatoes, green tomatoes, peas together in 1/2 cup water & salt to taste for 4 whistles & then allow cooker to cool by itself.
2. Using a pav bhaji masher, mash boiled veggies really well. 
3. Keep boiled vegetables aside.
4. In a kadai take butter & oil.
5. Add cumin seeds, asafoetida, chopped white part of green onions, chopped green chillies & chopped garlic. Mix & saute for 1 min. 
6. Add finely chopped big capsicum (bell pepper). Mix & cook for 2-3 min till oil separates. 
7. Add puree of spinach, pav bhaji masala, coriander powder & salt to taste. Mix well. 
8. If gravy feels thick add 1/4 - 1/2 cup water. 
9. Once gravy starts to boil add boiled vegetables. Mix well. 
10. Add finely green part of green onion. 
11. Cover the kadai with lid & cook for 10 min on low flame.
12. Switch off flame & add juice of lemon. 
13. Mix well & green pav bhaji is ready! 

TIPS:

1. Crush boiled spinach in mixer grinder to obtain spinach puree.
2. Serve hariyali pav bhaji with pav roasted in butter or oil.
