Gujarati Farsan Kadhi Recipe - गुजराती फरसाण कढ़ी रेसिपी - Priya R - Magic of Indian Rasoi

Gujarati Farsan Kadhi is a popular Chutney served with Farsan (or snacks) in Gujarati. It is made from Besan (Bengal gram flour) and is tempered with spices. It has a light tangy and sweet flavour. Do make this recipe whenever you make any farsan.

INGREDIENTS:

1 Tbsp Bengal Gram Flour (Besan)
1/2 Cup Water
Salt to taste
Pinch Turmeric Powder (Haldi)
1 Tbsp Oil
1/8 Tsp Mustard seeds
Pinch Asafoetida (Hing)
1/4 Tsp Ginger Green Chillies paste
1 Tsp Sugar
1 or 2 pinch Citric Acid (Nimbu ke phool). (Alternatively use 1 or 2 drop Lemon Juice)

SERVES: Makes about 100g Kadhi
PREPARATION TIME: 5 Min
COOKING TIME: 5 Min
TOTAL TIME: 10 Min
* 1 CUP = 237 ML


METHOD:

1. Take 1 Tbsp Bengal Gram Flour in a bowl.
2. Add Water little by little mixing it well to form a lump free batter.
3. Add salt to taste and Turmeric Powder (Haldi) and mix well. Keep aside.
4. Heat Oil in a pan.
5. Add Mustard seeds and allow it to crackle.
6. Switch off flame and add a Asafoetida (Hing), Ginger Green Chillies paste, and prepared batter. Mix well and switch on the flame.
7. Add Sugar and Citric Acid (Nimbu ke phool).
8. Mix well and allow the Kadhi to come to boil.
9. If required add more water.
10. Keep stirring and cook for 1-2 min and then switch off flame.
11. Kadhi is ready to eat with any of your choicest farsan!
